What is the best way to connect an Amiga 1200 to a modern LCD monitor? I have heard there are a few external adapters that can be used like the D520 HDMI Converter.
Or am i best to stick with an internal device like an Indivision?

It depends. Do you already have a monitor? If you are using a tv it might show a picture without any scandoubler.

I already have a 1084s. Would ideally like to see Workbench in a better resolution ;D
Not sure how this would impact playing games on a modern monitor?

Just for the Workbench and tools you can use
http://aminet.net/package/driver/moni/HighGFX40_6.
Of course this will require a scandoubler, like the Indivision.
Games are mostly not impressed by your high resolution Workbench, they stick to LowRes.
Another option is the OSSC, but it is not cheap either.

Besides the cheap SCART to HDMI you can get from the net, there is a new player in town : RetroTink 2x SCART
https://videogameperfection.com/products/retrotink-2x-scart/
and someone maybe a test here : https://www.youtube.com/watch?v=X2GBD4IeHq8

I use one of these:
https://www.amazon.co.uk/LiNKFOR-Converter-Adapter-Supports-Headphone-Scart-HDMI/dp/B078JJMR5J/ref=sr_1_19?dchild=1&keywords=scart+to+hdmi&qid=1588622058&sr=8-19
(also available via ebay)
Its very good at converting the RGB scart to HDMI (with various up-scaling resolutions, plus it has a HDMI pass-through so that you don't necessarily loose a HDMI port on your display)).
A good review of it here:

I drive my Amiga 500 with one of these - https://www.arananet.net/pedidos/product/ultimate-amiga-rgb-to-vga-adapter-with-rgb-amplifier/
on a Benq BL-912.
The Benq BL-912 is a 5:4 LED monitor which takes 15Khz and 31Khz.

OSSC worked great for me.
