Is the Gotek drive really picky as to which USB stick you can use? On my Gotek that is flashed for use as an Amiga drive, only one of my USB sticks work -- some off brand Dane Electric 8 gb, while my good SanDisks don't work at all. However, the same exact ones that will NOT work on my amiga gotek drive will work just fine in a gotek that I have in my PC.
I have them formatted as FAT32, and, I have SELECTOR.ADF on all of the sticks.

Yes, very picky.
Out of 5 USB sticks, only one works on mine, and it's a off brand too.

First thing that springs to mind is power issues, where your Amiga PSU may not be able to deliver enough power to the Sandisks.

I am using it externally, with power for the Gotek being drawn from a Bigfoot 500 power supply, versus from the Amiga mainboard. The bigfoot has separate power plugs for peripherals, much like an ATX PC PSU would have, with molex and 3.5 floppy connectors. Would this suffice?
I have also tried it with old, 256MB memorex and 1 GB corsair sticks.
Another question: Is the HxC SD based drive better? It seems that the Gotek for some reason locks the computer if the number of titles on the selector screen extends beyond one screen in length.
