has anyone else had their caps replaced by amigakit?! just wondering how long it takes as they've had mine since 30th april, should it take this long?!

You didn't put where you're located. Obviously if you're in the US or somewhere far away, shipping may be a factor.

do you have a support ticket assigned for your re-capping? if not, open one, and pester them for an update. sometimes they get flooded with repair business, so things queue up a little. i'm sure they haven't forgotten you. ;)
the other option -- since you're in the UK -- is just to ring them and ask. dave or chris should be able to let you know the status of the job.

Cost - See Amigakit page
Time - Depends on Amigakits work load, mine took a week not including the shipping times.
Board killer - No, Amigakit does a fantastic service. You might as well have the timing fixes done at the same time. Once mine was all done it was like a new machine, even Paula sounded like she was just born.

It takes about half a day for me to recap an Amiga - but don't forget amigakit probably have a queue!
Can it kill your working Amiga? Of course it can. You an always kill something when you're removing and replacing lots of components. But the chances of it dying when being recapped are much lower than the chances of it dying if you don't get it recapped.

How can I know if my A1200 needs this or not? Is there some checks I need to do? Or given the age it is a "Must Do"? Just as a clarification I do not use it that much but do not know how much it was used before I got it.

Every board is different.
General rule is "if it isn't broke, then don't fix it".

Personally I'm of the "prevention is better than cure" philosophy. :) I recap all my Amigas as standard. If you leave it too late, the first symptom of a capacitor failure may be much more serious damage caused by the cap leaking.

I'm sure they do, I had them do mine on my A4000D, and it fixed all the random issues I was having, Amiga has been running awesome since.
