Yup, Bars and Pipes Professional. It's incredibly powerful and versatile. Integrate it with SuperJam! and Patchmeister and you've got something amazing.
Before B&P was released/got popular, there were also a bunch of music/MIDI programs released by Dr. T's, although I know very little about them.

Bars 'n' Pipes & Music X would be the main two, OctaMED also had MIDI options which, while not anything compared to the aforementioned, still allowed you to use a tracker interface with your Amiga attached to synths and an Akai S950, something which a few professional producers found to be a good setup and which resulted in some very fine records.

Hi that's a good question and one I cant answer as I did not have an Amiga in the 80/90 period but I have midi software now for both the Atari and the Amiga that came from that time and I have to say after using it my opinion is that the Amiga was let down with there offerings compared to the Atari as you can see in the pics which is a real shame, best wishes Brian.

What professional MIDI software for the Amiga computers was available in the 80s/early 90s that saw the most use?
I'm not into music business, but I got the impression in the old days that Music-X was big at first, then later Bars & Pipes got its own fan base (B&P was pretty different and maybe too innovative for some people, but apparently very effective when you got it), and mid 90s or so there were many techno artists using Octamed too.
One photo in some mag comes in my mind, it was Captain (legendary Amiga demoscene musician (Space Debris, Beyond Music, Lapsuus...), now in Poets of the Fall) doing his first commercial band music (Dance Nation) with Music-X on Amiga :)
Edit: found a finnish review of Music-X there (http://amiga.unikko.org/C-lehti/jpeg/1991/4/06.jpg). It tells that Music-X has established its position as number 1 sequencer on Amiga, it's almost perfect sequencer, and doesn't have many bugs (crashed only twice within a year with intensive usage). :)

Bars&Pipes was even used in some professional studios.
Steinberg also released Pro24 for AmigaOS but I'm not sure if it was used that much, I remember the version for Atari being better.

Before Bars&Pipes came along, I did a lot of work with "SoundScape" (Mimetics).. Extremely flexible but it had a bit of a learning curve.
The author later left Mimetics to form his own Amiga software company.

There is also MUSIC X which does a nice job with MIDI.
FYI B+P pro with amigas along with high end studio equipment was used by Danny Elfman the famous hollywood composer who still does big budget hollywood movies. This is the actress Jenna Elfman's father.

I used to use Bars and Pipes for Midi and Tiger Cub for midi plus samples.
