Question on Amiga Forever... I know I could check the docs but since the community is the best DOC out there, I figured I'd try here first :)
I've had Amiga Forever for a few years now but have not used it other than to root around a bit. I recently dug out my A3000 and want to get back into it classic style. I want to do a fresh install on the hard drive but don't want to lose the software that is on it already.
Can I copy all partitions through Amiga Forever and store them on the PC? What is the easiest way to do so and how long could I expect a 240MB drive to take? I have the required null modem cable ans serisl/usb adapter on the PC.

As you have Amiga Forever you should also have the excellent Amiga Explorer which lets you access your Amiga on the PC though either serial or TCP/IP. You need to run a binary on your Amiga and install the software on your PC then after configuring it you can see your Amiga drives on the PC. It is not the fastest thing in the world but it works quite reliably. 240Mb maybe 4 hours?

But it is possible to connect the harddrive to the PC too right? And then either set up a similar configuration as your real Amiga and copy it to a new "harddrive" (harddiskfile) or create any Amiga you want, install AOS and then you can read everything from your harddrive and copy it as you like? I'm pretty sure that this should work and it will be way faster.

Yes.

Blimin ages! I would recomend (if you have the space) to make a big tarball (tgz probably given its an amiga and other zrchiving methods may take too long) and just copy that.
For your info I save my mac user dir this way using something like:
sudo (not needed on amiga!) tar - cvjf bigtar.tbz2 \Users\MyUserDir (obviously that is bzip2 not gzip though)

To be honest given the speed of serial transfer I would just hook up the drive to the PC and read it from there. If it's plain old FFS then linux should suffice, I belive UAE should be able to read other formats but I have never needed to try!
If you do do serial, then the one big file to transfer should make things a lot easier there, I eblive that is what I did when I moved from my 1200 back in the day! (must dig out that cd!)

Serial transfer = 11 days
Parallell port = 3 days maybe?
Attach the SCSI drive directly on the PC = 20 minutes
