Is it possible to convert a modern cd-rom to work on an older amiga? Say an A1000 or 500.

Sure, just get a SCSI interface of some sort and plug any SCSI CD-ROM drive into it. Easy. Could probably even do it with an IDE drive, but that would be more difficult because the interface and drivers are harder to come by.
