As I read the info:
I can put this in my A3000 and:
-Connect standard pc floppy drives.
-Connect ide harddrives.
-Connect atapi cdrom drives
-update my roms without having to update the rom chips.(I'd really like to know how this is done)
So, if I were to buy this and OS3.9 I could install 3.9 directly on the ide hardrive after booting of the 3.9 install cd and still access the software installed on my scsi drive?

Yes you can run SCSI and IDE on the same system. Not sure what you mean about ROM updates, could you explain a little further.

I believe the rom chips on the Catweasel S2 are 'Flashable' ... much like the memory in SD cards... so the data can be changed.

You can flash the EEPROM circuits on the Catweasel.. This has nothing to do with the system ROMs...

Also about booting from OS 3.9 cdrom, don´t get this wrong, you can only do this by using a special bootable floppy called ´Emergency disk´ and to get this disk you need to have another OS installed (3.0 or 3.1) and insert the OS3.9 cd and take the option in the menu called ´create emergency disk´. Once this is done you can reset the computer and boot with that floppy and that boots your OS3.9 cd. Very easy if you just installed a fresh brandnew 60 Gb harddisc. :-D

Umm.. No i think you are confusing this with the upcoming Kickflash product. 2 separate products.

If i understand the question properly. Yes you can install OS3.9 to the IDE HD and boot directly off the IDE HD connected to the Catweasel, and YES you can still access the SCSI HDs with no problem.
The Catweasel S-Class (http://cgi.ebay.com/ws/eBayISAPI.dll?ViewItem&category=4598&item=2773950299) is a really nice card and is really easy to set up.

The ROM update is only for the flash ROM on the card. It lets you update the firmware. I have one, and it works fine. You cant boot 3.9 with just the card, you still need CD filesystem software. The drives work well in 3.9, BUT to boot Amiga 880k disks on the drive you need the Kewalda adapter. This connects to the Catweasel and then to the Amiga floppy header making the drive act like a 880k DF0. If you want two drive to work in bootable Amiga games, disks you then need TWO kewalda adapters. I keep one old external drive to use as a second DF1 for bootable multi disk games.
