I've been tempted to buy an Amiga 1200 NTSC from Amigakit.us - but I notice the power options are UK and Europe only. Does this mean I either have to get a power adaptor like they sell for overseas business travelers or does one of the two they offer also work here in the US?

You can use any A500 PS for a base A1200. You can usually find them cheap locally. If I were you (and soon I will be in that position), I would either get the High powered PSU from AmigaKit at the time of purchase or grab a PS from somewhere else. They usually go for under $20 on Ebay.

The motherboards for both NTSC and PAL Amigas take the same voltage. Both 110V and 220V power supplies convert to the proper voltage. Use whichever power supply you need for your wall electricity, no matter if you've got an NTSC or PAL Amiga.
Why do you want an NTSC one? I'd get a PAL one since it'll run more demos and games. You'll need an RGB monitor or a scan doubler with VGA output (like Indivision) unless you have a PAL TV lying around... but assuming you're using a monitor and not a TV, PAL is a better choice. I'm in the US and I've been using a PAL 1200 motherboard. I use a 110V power supply from my Amiga 500. The power supplies for the 500 are compatible with the 600 and 1200, but are a bit more powerful. Only really matters if you're using an accelerator, otherwise the stock 1200 power supply is OK.

Amigakitt also sells this (http://amigakit.leamancomputing.com/catalog/product_info.php?cPath=42&products_id=771) and who doesn't have an old ATX Power supply sitting around.
What I did was take an old AT computers powersupply and cut the end off my old DEAD PSU and attached the wires accordingly. Its been years and I had help back then to get it right but it still works to this day. Amiga only needs 12 and 5 volts so its easy to make a PSU just isn't as pretty. You can order and cut the PSU's cable that comes with it if you want to. I'm sure some one here knows the pin outs.

I have a PAL A1200 and I run Workbench in NTSC on a 1084 because I can't stand the PAL refrsh flicker, which is unbearable if its interlaced as well.

Never seen refresh flicker from a PAL Amiga in either PAL or NTSC modes. Interlace of any kind sucks hard on Amiga if you don't have a flicker fixer installed.

You also need -5v for audio.

-12V for serial port and audio.
-5V is available only on Big Box Amigas due ISA requirements (and on PCI bridgeboards).
