It looks like my 600 has the old roms, the one with the broken ide support. What's the best fix for this? Can I use 1200 roms on the 600 or do they need to be 600-specific? Should I just upgrade to 3.1 or stay with a later 2.05? Does IDEFIX or something like a buffered ide interface fix this problem?

you need at least 2.05(37.350) or 3.1 roms. a1200 roms wont work. a500-a2000 3.1 roms are compatible (they are the same)

You need A600-secific. It's the same as for A500 or A2000, but not for A1200 (A1200 as two chips, A600 has only one).

3.1 is the better choice IMHO.

IDEfix (Software) -> yes, but you have to run it from floppy disk because the HDD is not recognised.
Scsi.device from here (http://os.amigaworld.de/index.php?lang=en&page=37) used with LoadModule (http://aminet.net/package/util/boot/LoadModule) fixes it, too. You have to run it once from floppy disk after each cold start, then you can boot from HDD.
buffered interface -> no. It's a software (driver) problam. Another hardware cannot fix it.

Thanks for the response. I'll get a 3.1 rom for the 600 and my 2000.
