I may have a bit of spare time on my hands soon, and was thinking about playing with an amiga (emulated form)
Beyond booting up defender of the crown, I remember from my Amiga days Amos and RSI Demomaker.
Did anyone else ever make a 'demomaker' and if not what was the latest version available and where can I get it?
Second I fancy making a game (not again I hear everyone say)
I used Amos in the big box when it was first released and loved it.
What are my options for writing a classic amiga game and where can I get the files from?

You can get AmosPro and advice from http://amos.pspuae.com/ .
There's currently no demomakers uploaded there but I've written a text-scroller demo: check out the Ribbons and Curls demo on the above website.

I too remember RSI Demo Maker - great tool.
There was another very good demo maker released also - the name of which escapes me, however CU Amiga ran a series of great tutorials.

I think Amos Pro (BASIC) is the most popular game programming language on the Amiga but it isn't as powerful as Blitz Basic 2, which seems to be able to create more professional looking, faster games. Some commercial games even used it.
And if you don't want to code, you could try Backbone from the Aminet, it's a game maker program with lots of features.
And if you are really interested in making Amiga games, maybe you could join our team, Underground Arcade!

Im not sure what skills I could offer, but I love to give anything a go.
As far as programming is concerned Im a little light on the game side as databases and PHP is more my bag.

If you want to use Blitz Basic, make sure it is the latest open-source version: AmiBlitz (http://www.david-mcminn.co.uk/bernd/). It has most of the bugs fixed from the older Blitz Basic 2.

One of the newer 'demomakers' is Karate: http://www.k-fighter.net/
It works even "next gen" machines (you can usually exit startup script to bigger resolution too on them ;)
There's been quite many demos done with it lately.. usually pretty crap, but some better examples:

As a long time demoscener I really, really wouldnt recommend Karate. Either you have some talent and you join to an existing group, or you dont, and waste everyones time doing scripts for a demomaker. Making demos has always been something else than releasing quickmade crap, at least so I would like to believe.

I hear what you saying and its true as saying a gamemaker cant make as good a job as a code+ compiler.
But there is an argument that says, how about a lil play and sees where it goes.

for utility type software which is better, AMOS or Blitz? btw, where does one get a manual for blitz basic?

I think for an application basis, it would be better to use something like Blitz Basic... Well at least for Blitz Max on PC it is pretty decent.
My brother is an ex Amos programmer, and he decided to develop a "Bob" engine that you could make maps, sprites, etc. with. Yes, we all know in reality they are not bobs n such, but its a pretty good program he made.
Right now I convinced him to work on a Blaster Master clone and write our own story with it. So far we got the game engine wrote and plays exacly like the NES lol. :-)
