Hi and welcome
Your comeback resembles mine, I bought an A600 about 6 years ago just to be able to play some gamnes I played when I was young but I ended up owning a bunch of Amigas and my interest for the AmigaOS, hardware and software became and new hobby and passion.
To prep that harddrive you have and to install the Amiga OS you need a set of workbench disks.
The Workbench version to use depends on what kickstart version you have.

welcome back then :)
you have a lot of stuff to discover, to learn and to surprise you about amiga! if the hard disk is empty and you have the workbench floppy disk, start with an installation of the workbench to the hard disk. some games can be run from hard disk, some others don't. just be pattient :-)

@TrickyDave:
Welcome to A.Org!
A note of caution: if you connect your Amiga to your PC's monitor, you may not be able to display all the available screenmodes. In particular, games software will make use of screenmodes originally designed for TV output that your PC monitor almost certainly won't be able to handle.

In order to connect the A1200 into a VGA monitor and still get the old games to work, you'll need an expensive adapter called a "scan doubler" that will convert the horizontal scan rates of the old games from a TV scan rate to VGA scan rate.
Personally, I'd just stick with the TV set or find an analog RGB monitor.
