I used Deluxe Music 2.0 a lot back in the day.  It has both MIDI-Out and MIDI-In capability.  But since it is not a true sequencer, it does not do MIDI-in in real-time.  However, it is a great musical notation editor.  For sequencing Bars 'n Pipes is a good bet.  Others were Music X and Doctor T's from what I remember.
A1000 - 2 Floppies, 2 MB RAM, OS 1.0-1.3
A500 - 170 MB HD, 8 MB RAM, OS 1.3/2.04
A2000 - 350 MB HD, 8 MB RAM, A2630, OS 2.04
A2500 - 540 MB HD, 8 MB RAM, A2630, OS 3.9

Amithlon - 49 GB HD, 768 MB RAM, PIII-1G

I have no experience with OctaMED, but Bars and Pipes will definitely do that for you. It's extremely powerful and extensible, but also fairly complex. There are scanned manuals kicking around online - highly recommended you take a look at those.

If you want to try something with a simpler interface, consider Deluxe Music 2.0. It has a traditional staff/note UI like most versions of Finale, supports recording via MIDI input, and you can export to formats supported by Bars and Pipes (SMUS) if you want to work with that later on. I don't know what sort of interoperability DMusic has with OctaMED - I'll let the OctaMED experts handle that question :)


Deluxe Music 2.0 can load and save MIDI format files.  OctoMED SS can load MIDI files, but I don't see an option to save back to MIDI format.
