At first this part really bothered me:
"Apple's aging iBook line is still using a relatively sluggish 600 MHz G3 processor at the high end. While Apple has moved the rest of its product lines to Motorola's PowerPC G4, iBook users have been left with a chip that offers lackluster performance in OS X's rich interface."
Hopefully, the lackluster performance of OS X has more to do with OS X or the hardware design of the iBook than the actual G3 processor.
Anyway, ... by starting out with the G3 processor on the AmigaOneG3-SE, at least we will be using proven technology. AmigaOS4 should fly nicely.
Wouldn't it be nice though to have a 1 GHz G3 processor instead :-D
