The copy protected games that don't work are usually using Rob Northern protection...the protection scheme does horrible things with stack frames or something, I did know at one point but I've forgotten now. Doesn't matter which kickstart version you had, though.

There are actually plenty of WHDLoad installs where the quit-key works on the 68000. It's entirely in the hands of the person who creates the installer.

.

...The 68010 were also a tiny bit faster, but nothing worth noting. Was one of my best/cheap upgrades I ever did back in the day...

actually that speed difference is very noticeable when I'm playing the latest version of my fav vertical shooter 'Deluxe Galaga' on my A1000:) With the 68000 I had some slow ups when there was too much action on the screen & especially on boss screens but the 010 smoothed those area out quite noticeably.

What feature of the 68010 enabled were WHDLoad programs using for the quit key?

Will have to try Deluxe Galaga, think I still have a 68010 somewhere. Mainly got it to let WHDLoad work properly but noticed a speed up with a couple of games, even workbench :-)
