What about Phase5 Blizzard1260 without SCSI? Regular 72 pin SIMM too thick?

Most "modern" 72-pin SIMMs are made with similar-sized chips to those used in modern DIMMs, and therefore the SIMM itself is very thin and will fit the Blizzard 1260 without problems. The only issue I've found is with 128MB SIMMs - I've yet to find one of these with the thin chips on it. But you'd know by looking at a SIMM if it's likely to fit. I've a couple of 64MB ones with chips on both sides and they work fine in my 1260.
