Home automation?  Use it to control the lights?  Hook it to a small screen in the kitchen and use it to look up recipes?  If you spill grease on it it's not like you're out the biggest investment in the world.  A display ticker for your help desk tickets?

The best robot I ever put together was when I got two broken Roomba's off ebay and combined the parts to make one working one, lol.  I love the idea of these boards though, am just sad that if I got one it'd probably sit on my shelf for years, in between other projects, while I cry over not having enough time for it.  :(

Hack a second Ethernet port onto the expansion bus and use it as a firewall or intrusion detection device on your LAN?
