Does anyone here have much experience with these?

I got a few, if it's worth it depends on what you are going to use it for and if you have a rack for it?
Often it's more cheap to buy a complete old 1U server on ebay and such and replace the internals then paying for a new 1U chassi (at least where I live, I get 1U systems for 30-50-ish $).

I agree its cheaper to just buy one unit rackmount old servers for cheap and use the case than buying the case. I got a bunch of 2.0 ghz dual core's for like 50$ each. I was going to build a seti gpu farm, but I haven't yet...

I will take this advice.
I guess I am trying to balance between a lot of  cpu cores in a 1U case and cases that are big enough to put at least one GPU in it.

Will a dual slot GPU fit into a 2U case?
I guess there is a riser that will allow that.
Also is there water cooling for 1U?

Yes with a flexible riser you can fit dual slot GFX cards in a 2U case.
But depending on what GFX card you are using make sure to check clearance in the case so your card is not to long to fit, many 2U cases have a good amount of space for long expansion cards but check before you get one to be sure.

You can put water cooling in a 1U case yes.
I would skip a reservoir and go for a closed loop, use the thinest radiator possible then use the 120mm Scythe slip stream slim fans since they are only 12mm thick, pick a decently strong pump since you are going without res, pick angled fittings from the water blocks to avoid bending the hose, then just pick any block that you need and your done.

I may go the 3U route. It seems to be a good trade-off.

You'll be far happier with a 2U or 3U case, size wise - especially if you want to use watercooling.

I've done watercooling setups in a 1U, but it's tight space wise, too tight IMHO.
