Kickstart advice please

One of my A600's has a hard drive fitted but the kickstart is a 391304-01 V2-05 and I've read on this forum that it doesn't support hard drives over a certain size.

I'm thinking of buying a new kickstart chip but would like some advice on whether it's better to buy the 2.0 or the 3.1

Kickstart 3.1 is much better than 2.x. If you want the latest versions, there is also 3.2 which was released nearly 2 years ago, 3.2.1 (generally a bug fix of 3.2), and version 3.2.2 is imminent. Amiga OS 3.2.x will run on Kickstarts 3.1 upwards.
A1200 in DIY Tower. 3.2 ROMs (softkicking 3.2.2), OS 3.2.2 with ClassicWB, CF card, CD RW and IDE to SD adapter running off the internal IDE port (using the A4000 4-port IDE adapter from Amigakit), Pistorm 32 lite with Pi4/2GB/Emu68 or Blizzard 1230-IV, with 32MB 60ns RAM and 50MHz 68882 FPU. 3COM PCMCIA Network card running with Miami DX.
MorphOS on PowerMac G5 and ATI 9600 pro

+1 for 3.2

In the macro picture you're funding new development for our beloved platform and you're getting the latest and greatest. Also, when you purchase 3.2 you get access to most of the old ROMs which you can use/test/play with a Linux/Windows emulator.

The number you quoted is the part number. The actual ROM is the 37.300.

Here is a picture of my A600 37.300 with a 40GB hard drive. There is a trick to just formatting 4GB and leaving the rest of the drive empty, but that's not what you asked.

The ROM you need is from the 2.1 series of which 2.05 is one and there isn't a problem with your ROM. Trust me.

Your ROM version appears on your early boot up screen. The 3.1 isn't going to help you with much larger hard drives. You need a work around.
