So I installed Amikit. Went to change the Workbench backdrop into another picture, selected, saved....
...nothing happened.
Do I do something totally different with Amikit than I would on a real Amiga?

Are you using DOpus as a workbench replacement? If you are you'll need to set it in DOpus' prefs, or tell DOpus to use the WB pattern prefs.
