For me some of the best were:

Hired Guns!!!!
Pirates!
Syndicate
Settlers
Lord of the Realms *surprised no one else mentioned this*
Zeewolf 1 & 2
Another  world
Alien Breed series
Jaguar XJ220
Supercars 2
Midnight resistance
The Dizzy games

Quality coin-op conversions also made the machine in my mind. Compared to what everyone else had (spectrum, C64) seeing Chase HQ and Turbo Outrun look so close to the arcade counterparts was what told me thhe machine  was special...and I was only about 10.
Amiga 4000, Warp Engine 040/40MHz, CV643D with scan doubler module, Tocatta soundcard, Deneb, 72Meg fast ram, 18 gig scsi hard drive.

I was going to buy an Amiga the second that I saw it released at the Australian PC show...  What made it from a 'want' to 'need - must have!' was when I first saw Defender of the Crown.

Games that continued to solidify the Ami's place as the premier graphics game machine during it's history:

FA-18 Inteceptor - made my RAAF Pilot brother sell his PC and buy an Amiga.

Lemmings - taking puzzle games to the next level

Populous - Taking strategy games to the next level

As far as 'full on screens of electric death' go -- for their day:

Silkwork (original)
Uridium 2

Interceptor and Xenon2 made me to buy Amiga (along with Deathstar and Red Sector megademos ;). Later on there came lots of other games, but I'm too lazy to list them... well ok.. here's couple.. Lemmings, Shadow of the beasts, North and South, Speedball, Superfrog, The Settlers, Supercars2, Pinball Dreams, Wings, SWIV, Syndicate, Nuclear war, BattleChess, Virus, Another World, Stunt Car Racer, Kick Off, Sensible Soccer, Cannon Fodder, Oil Imperium! And lots of average (now bad) games, which attracted at the time :) Oh and Microprose Formula One Grand Prix.. year (or so) before the PC version :)
Daily MorphOS user and Amiga active.

i think i'm going to agree with Edpon on this one...
the publishers and developers really seemed to have earned their crust at this time.
when ever you saw the psygnosis owl face on boot up you knew you were in for a treat.
Bullfrog too, for doing the populous series, theme park, syndicate...
Electronic Arts actualy ment something back then...

makes me think that these days of corperate money, infinite ram, massive processors, pixel/vertex shaders, GPU's ... something has been lost along the way...?

its almost like asking, why are hollwood blockbusters all crap re-hashes these days? i get games off steam these days. don't bother with shops. the last thing i got that was actually interesting was portal. maybe i'm growing up  :-o   "in my day...."

Although it didn't strictly 'define' the Amiga - Switchblade 2 is a great platformer with very stylish graphics and rock hard gameplay (for me anyway) and deserves a mention I think.

For me, I bought my first Amiga, an A2000 with A2090 card to play Dungeon Master.  Yeah, I know this game was a port from the AtariST but the Amiga version was better, imho.  I liked it so much I then bought Chaos Strikes Back.  I never upgraded to an AGA machine until maybe 1998 and therefore never bought Dungeon MasterII, as it was reportedly AGA only.  Little did I know all these years later it'll actually run on any 68020+ ECS Amiga w/ 1Mb Chip and some fast ram.

I remember also getting hold of a Hired Guns demo in the early 1990s and thought it was awesome, though I never bought the full game.  It was Doom before that game took off on the PC.  Of course, it used the old dungeon master type interface, not the pseudo3d of doom.

Funny, but I never did like Captive, Knightmare or any of the Tony Crowther games.

My favorite PD game has to be either Deluxe Galaga or Scorched Tanks....great stuff.

I agree with you, Captive games (Captive and Liberation after) were nice games at the start, but later became very boring for me. All the same again and again. As for the Knightmare game, please stay away... :-D
