LucasArts impeccable Battlehawks: 1942 gets my vote.  It's less a flight sim and more of a first person shooter in the air (although some basic flight sim rules do apply).

It was one of the first flight games I ever thought worked vastly better with a mouse than a joystick (A10 Tank Killer was the other).  The manual was gorgeous, not only detailing the missions but outlining the historical perspective and peppered with first-person accounts and historical photographs.

I highly recommend it.

There was also an M4 Sherman simulator in the vein of M1 Tank Platoon but I never played it.

you can search for ww2 games, watch trailer on my signature link and then search on back2roots
in search engine of retrotrailer you can search for "ww", "ww2" or "world war 2", "WWII"
there are some games about World War II
ww is also wrestling :D

There is Dasboot another good submarine sim and Fighter Duel - Mustang vs Zero Pro.

Hell yes!  I loved that game!  Damn, now I want to dig it up again and play it.  Red Storm Rising is a brilliant submarine game too, but that's WW3...

I'm sure there were a few tank games kicking around too.

A few others that come to mind:

Escape from Coldiz
Firepower (seemed like older WW2 tanks to me)
1943 - Battle for Midway
Into The Eagles Nest (think Alien Breed meets Doom)
